Who invented pizza? When Italian immigrants arrived in the US, what did they eat and how did they transform American cooking? After pizza, Chinese food is the second most popular take-out food in the US. How did Chinese immigrants use American ingredients to make foods that tasted Chinese, and how did these dishes become so popular? ISU History Professor Dr. Anne Foster takes a close look at how ethnic cuisines become “Americanized.” She explores how Italian food became Italian-American and tells the story of how Chinese immigrants created restaurants because they had no means of cooking for themselves.
